Your first service

The morning rush is violent and short. Between 6:30 and 9:30 the counter turns lines of regulars, many of whom order the same thing every day, and then volume drops sharply.

Close out at your usual time and compare the report to the drawer.
Keep a second person next to the register for the first hour.
Ask the first ten customers if anything about checkout confused them.

The first week

Do not leave "dozen" as a custom amount typed in by hand. Build it as an item so inventory and reports show how many bagels actually walked out the door.

Review the item report and trim buttons nobody uses.
Look at tips by employee and confirm the payout matches.
Check deposits against your batch reports.
