The morning rush is violent and short. Between 6:30 and 9:30 the counter turns lines of regulars, many of whom order the same thing every day, and then volume drops sharply.
Bagels are sold singly and by the dozen, with spreads, toppings and sandwich builds on top. A dozen button that applies the baker's-dozen rule and a modifier group for spreads keeps the counter fast.
Cards and taps dominate, with cash from older regulars. Many customers pay for a whole office order in one transaction, so large single tickets are normal.
Early opening hours mean one or two people at the register, so PIN login speed matters and shift reports show who opened and who closed.
One Station Duo at the counter with a built-in printer for tickets, a second Mini or Flex for a second line, and a kitchen printer or display if the build line is separate.
